So when I got home from work, I was inspired to cook something. Anything. And I've been meaning to make some Corn Fritters. I made thai-style corn fritters a few years back, and they were amazing. Today I was too lazy to look for my thai cook book, so I googled "corn fritters" and chose the very first recipe that popped up.
Lesson #1: Don't be lazy! Do more research!
So i whipped up a batch of paste, or mixture, or whatever you want to call it. And I used my beloved PAM spray to fry them.
The result was disastrous.

Yes, they are like pancakes, thankyouverymuch.
Oh, I should have known when the recipe called for 1 CUP of flour! And 2 tsp of Baking Powder!
They were still edible though. I used 100% wheat flour instead of all-purpose white flour, so the texture was slightly gritty. Corn was sweet and crunchy. Yum! Love the texture of corn! I think I'm supposed to eat it with maple syrup or honey. I ate them with my dinner (fish, cauliflower, shrimp) in place of rice. My dad actually liked them a lot. He ate 8 pieces!
So the disaster was not so disastrous in the end! Phew.
Next time, I will google "thai corn fritters" or "indonesian corn fritters." And I vow to try again at another time.
